Beloved restaurateur Stephane Bombet’s new partnership with legendary toque Scott Conant in the former Terrine Space on Beverly Blvd, boasting modern Italian fare, a killer wine list and one of the more charming patios your correspondent has ever enjoyed a burrata on.
Because when those patio lights are aglow and you’re seated beneath the canopy of the massive Javanese bishopwood tree, it’s not gonna matter whether you’ve brought friends, clients or a date — whoever it is, they’re gonna be complimenting you on your reservation acumen. Plus Ryan Wainwright (of Bombet’s other noted eatery Faith & Flower) is a cocktail wizard, and chef Freddy Vargas (who came with Conant from famed Scarpetta) is turning out some absolute bangers from the kitchen, including Conant’s famously delectable sphere of basil-tinged spaghetti pomodoro.
A couple tips from Stephane himself on creating an enticing environment for guests:
“You know you’re going to be seated for a couple of hours, so you want to be comfortable. For comfort, it’s all about the materials we use.
Having beautiful lighting is also key — it needs to be perfectly adjusted so that the food looks good but also the guests look good. To make guests and their friends look nice, use lighting with warm tones like oranges and yellows.”
