To keep tabs on every San Francisco restaurant and bar opening is folly. But to keep tabs on the most worthy? Yeoman’s work, and we’re proud to do it. Thus we present Table Stakes, a monthly rundown of the five (or so) must-know spots that have swung wide their doors in the past thirty (or so). Bon appétit.

With a James Beard Award and Michelin-starred restaurant to his name, Chef Michael Mina can do pretty much whatever the hell he wants and people will eat it.

What he wants: new project MINA Test Kitchen, kicking off a series of pop-up dining experiences tonight.

Middle’terranea — as he’s dubbing it — will last for a couple months.

Which means you can still buy tickets. If you move fast.

What to expect: an exploration of the cuisines of the eastern Mediterranean: Lebanon, Israel, Turkey and Mina’s native Egypt.

While you wait (think mid-August for the earliest available table), try one of the four other new-to-the-scene restaurants we’ve got circled on our calendars this month.

There’s whiskey and venison. Belgian beers. And Eton mess with summer fruit.

Plenty to keep you busy till that reservation comes up.
