Step one: Grub
Sushi by Boū isn’t a leisurely five-course, four-hour feast — but it’s no less cool. You’re in for a one-of-a-kind 30-minute, $50 omakase from Chef-owner David Bouhadana at The Sanctuary Hotel. The experience involves 12 pieces of fine sushi served two-and-a-half minutes apart. They take reservations by text solely (917-348-5737); it’s counter only with just a handful of seats. Coined as “sushi for the people,” it’s excellent in-and-out fare that won’t break the bank.

Step two: Garden Party
A Night at Niblo’s Garden with Green Wood is back by popular demand to celebrate one of Soho’s most renowned theaters of yesteryear with romantic lanterns, bustling fountains, music, dance and entertainment. Bring a blanket and settle in for a Victorian soirèe with the Bindlestiff Family Cirkus, a vaudeville star since ‘95. You can expect a few fire-eaters and contortionists to float by as well.

Step three: Raise a glass
After all that stimulation, a toast. Meander over to the new Air’s Champagne Parlor from Ariel Arce, formerly the Wine Director at Riddling Widow and Birds & Bubbles. The best part? It’s affordable — something one doesn’t often hear in the bubbly world. The Champagne and sparkling wine list is divided into three sections: “50 Under 50,” comprised primarily of global sparklers; “Geeky and Niche,” grower-focused expressions made by Arce’s favorite producers; and “Personalized Flights,” as served from a customized roving cart. And if the evening calls for a stronger nightcap — they have cocktails, too.
