Meet David Santos.
He’s the jolly, bowl-full-of-jelly chef behind NYC’s Um Segredo supper club.
His friend Russell Jackson is the piratical, big-bicep’d toque behind SF’s underground culinary phenomenon SubCulture Dining (as well as a Food Network vet).
Together, these two chefs are starting a collaborative supper club: “Meeting of the Dons” — because they’re underground dining dons, get it? — popping off tomorrow night at Santos’s West Village restaurant, Louro.
These two culinary cats have done a couple dinners before, but with Jackson’s boots now on NY soil half the time, they’re making Meeting of the Dons a monthly occurrence.
Tomorrow night’s theme: “Woodland Creatures,” in which the two chefs drop seven courses of small forest critters.
Smoked turtle croquettes. Rabbit ravioli. Duck heart tartare.
Don mind if we do.
