Let’s admit a simple, desperate truth about pairing wine:

We have no idea what we’re doing. 

Women, being ever attuned to our foibles, know this.

So get thyself to Coppervine, the new Lincoln Park restaurant dedicated to perfect pairings, open for reservations now.

Coppervine’s a dimly lit, intimate dining room with a cavernous sloped ceiling.

On the menu: elevated American comforts, presented with three suggested pairings.

Sommelier and co-owner Don Sritong enlightened us on his favorite unions:

The Dish: Grilled striped bass nestled on top of herbed gnocchi
The Drink: A glass of 2011 Palmina Arneis
Why: “We wanted a high acid, citrus-driven wine to accent and make the white fish pop.”

The Dish: Maine Lobster Mac & Cheese topped with a panko-romano crust
The Drink: Brown Butter Old Fashioned
Why: “Why fight richness? We infused bourbon with butter to make a full body, textured pairing to go with this really rich lobster mac. Decadence on decadence.”

A thoughtful pairing, indeed.
