Be ready for a nine-course seasonal tasting menu that’s updated weekly according to what’s available right in The DeBruce’s backyard — both metaphorically and literally, as Chef Aksel and his team are known to personally forage for herbs and greens.

1. Junction Pool: “One of the most famous fishing holes in America, found at the convergence of Willowemoc Creek and the Beaverkill River. It’s said the currents there mystify fish … but it can also be crowded, so go there early, late, on a weekday or in the rain.”
2. Livingston Manor Covered Bridge to the Catskill Fly Fishing Center: “This section of the Willowemoc is wide and filled with varied pools and riffles. It’s a no-kill zone, so you won’t be taking home dinner. But you will be taking home photos — it’s a very scenic stretch, with the starting point under a 100-year-old covered bridge.”
3. Mongaup Creek: “The larger rivers are often stocked, so getting into the smaller tributaries presents a great chance to snag a wild brook trout. This section is also conveniently located near the DeBruce Hotel for a post-fishing tipple.”
